Flourless Chocolate Muffins

It’s not like we don’t eat flour, we do! I just really love these muffins, and so do my kids (bonus!)  I love a simple recipe that the whole family can enjoy. These would be great to bring to a gathering where someone has Celiac Disease, because they are gluten free, as long as you make them safely without cross contact with gluten.

I sometimes make these muffins with my mini muffin tins, and adjust the cooking time a bit.  The kids love these in their lunches, but I also find they are tastier when heated up a bit (hard to heat at school).  I often add a muffin to a mug, heat for 15 seconds, then top with yogurt and berries.  Guess what? They freeze too!  You can find the recipe here. I have made these muffins with pumpkin, banana or applesauce (recipe calls for pumpkin, but mashed banana or applesauce works too).  Enjoy!
