You know the inevitable crumbs at the end of any bag of granola?? You’ve all experience this, right? I feel like the crumbles at the end of a granola bag always go to waste! You could certainly sprinkle them on some yogurt, or grab a banana and roll it in the crumbles, but why not make energy bites?
I dumped these granola crumbles (about 1 cup) into a medium size bowl, and added almond butter, honey, and some chia seeds. I kept adding until the mixture, when mixed well, created a cohesive ball. Generally speaking it took about 1/2 cup almond butter, 1 Tbsp honey, and 1 Tbsp chia seeds. This is one of those recipes you really can’t mess up! Once you’ve created the balls (about 1-2 inches in diameter) put in freezer for 3-5 hours to set. Then pop in fridge and eat throughout the week!
Feel free to use peanut butter, Sunbutter, or any other “nut or seed butter” of your choice. Enjoy!
