The term “almond mom” has popped up here and there over the past several years, but what does it mean? Is it a positive trait, or a negative one? How do we raise kids that are autonomous and look at food as a means of pleasure, enjoyment and nourishment?  Join me as I take you through some of my most helpful tips for raising confident eaters, and yes, not being an “almond parent”.

Cheesy Chicken Casserole from Southern Living:

4 cups shredded rotisserie chicken

1 (10.5oz) can cream of chicken and mushroom soup

1 (8-oz.) container sour cream

1/4 tsp. black pepper

8 oz. sharp cheddar cheese, shredded (2 cups)

25 round butter crackers, coarsely crushed

  1.  Stir together first four ingredients and 1.5 cups cheese, spoon into a lightly greased 3-quart slow cooker. Cover and cook on LOW 3 hours.
  2. Combine remaining cheese and cracker crumbs; sprinkle over casserole. Cover and cook on LOW 1 hour more. Let stand 5 minutes before serving.
