I always tell parents and caregivers to try exposing their kids to as many flavors, textures, and smells as possible. I sometimes feel I have fallen short on my own guidance, as I haven’t done a great job exposing my kids to different cuisines from various cultures. We tend to stick to a lot of the same foods throughout the week, although I do sneak in a variety of grains, fruits, vegetables and proteins, I don’t use a lot of new spices, herbs and seasonings. I recently found this recipe for Instant Pot Butter Chicken and thought I’d give it a try. I love a good pressure cooker recipe (simple and quick).
I served this on a bed of brown rice. I’m not sure how to make butter chicken look “mouthwateringly delicious” in a photo (especially when taken at night) and this picture does not do it justice. My mom, Nick and I enjoyed this dish immensely. The kids didn’t try it. I figured they wouldn’t, but I still gave them each a small bowl of it (small) to expose them to the smells of a delicious Indian meal (that apparently originated in New Delhi).
