My kids have this song they listen to on our Alexa, which goes a little something like, “Yum, yum, breakfast burritos! Yum, yum, breakfast burrrrritttos!”. It’s catchy, albeit weird. My kids genuinely love a good breakfast burrito. They are so easy to make for just about any meal, including dinner. I love that they are balanced (carbs, protein, fat) and pair well with many things. I always serve mine with some salsa, but my kids aren’t quite that adventurous, despite my best efforts.
A good breakfast burrito starts with potatoes. I buy the mini petite potatoes, don’t cut them in half, just drizzle oil, salt and pepper. I bake for about 40 minutes at 350-400 (or until “mashable”). When done, I gently mash a bit to add to the burrito. Next, eggs! I whip the eggs until the yolks are mixed well, then add some milk, salt and pepper. I use butter in the pan instead of oil, which adds some flavor. I cook my eggs on a low heat, about 3 or 4 on the dial. Next, I make some guac (or even just mash up some avocado without any lime juice, just salt and pepper). Throw everything into a burrito. Finished.
